As I get ready for Spring and Summer, here are two of my favorite recipes. One of the most importatnt influences on health is good nutrition. Eating food that is healthful, nourishes the body, calms the mind and certainly delights the senses. Enjoy!
Berry Flax Smoothie
. 1C berries, frozen
. 1C milk
. 1/2c unprepared oats
. 2tbsp ground flaxseed
. 1/2c plain Greek yogurt
Place all ingredients in a blender--- Mix until smooth.
Avocado, Corn, & Pinto Bean Salad
2 C fresh, uncooked corn or frozen, defrosted
1 can (15oz) pinto beans, drained and rinsed
2 small tomatoes, diced
1 small red bell pepper, seeded and diced
2 scallions, thinly sliced
11/2 Tbsp. fresh lime juice
1 Tbsp. olive oil
½ tsp seal salt
1/3 tsp ground black pepper
In a serving bowl, combine all the ingredients except the avocados.
Cover and refrigerate at least 1 hour to blend the flavors.
Just before serving, peel, seed, and slice the avocado. Top the salad with the Avocado slices and serve.
Makes 10 servings. Calories 100, Cholesterol 0mg, Protein 4g, Sodium 165mg
